Founded by New Yorker Daniel Szor, Cotswolds Distillery opened in July 2014, with the guidance of Dr. Jim Swan. They use 100% locally grown, floor-malted barley and mature the whisky in first-fill ex-Bourbon barrels and reconditioned red wine casks.
In October 2017 they released their Cotswolds Signature Single Malt Whisky, the first whisky ever to be distilled in the Cotswolds. Matured in shaved, toasted and recharred ex-red wine barriques, it is blended with whisky matured in first-fill ex-bourbon barrels. It is bottled at 46% abv.
